Mezcal was born with Mexico. It is the product of the fusion of two cultures that occurred when the Spanish, who brought with them the distilling techniques they had inherited from nine centuries of Arab occupation, discovered the wonder of a land in which over two hundred varieties of agave grew.

 

The catalyst was the magic that surrounds the maguey, a magic our forebears recognized and which provided them, amongst other things, with beverages such as pulque that formed part of their ceremonial rituals.

 

Today, mezcal is subject to a protected designation of origin whereby it can be produced in just eight states (Oaxaca, Guerrero, Zacatecas, Durango, San Luis Potosi, Tamaulipas, Michocan and in the borough of San Felipe Torres Mochas in the state of Guanajuato).
